Dog days of summer ?????
Monday mouthful ? Like this cow, I sometimes bite off more than I can chew. Moving to rural Georgia from SF. Taking on a carnivore challenge. Living and working on a farm. Navigating e-commerce and life in the wake of COVID-19. Starting and maintaining a newsletter. Committing to a writing habit. With so many projects underway, there’s only one thing to do: just keep chewing. Or, as Dory would say: just keep swimming ?
This is ideal. They say birds are a sign of a healthy ecosystem. These egrets follow our cattle around, feeding on insects and small vertebrates, helping keep the insect population in check. Can’t imagine the insect load without these birds. Guess that’s what draws them, and why it signals ecological strength. Driving around the pastures while cattle graze and egrets take off for flight, it feels like another world. Almost like Jurassic Park.

Heavy sizzle on that fire beef. Literally. This is bulgogi, which in Korean is fire (bul) beef (gogi). Recipe inspo from @chefchrischo and @damn_delicious but made it a little Paleo / Keto? ? 4 lb boneless ribeye roast sliced thin (1/4 inch but I’d even go 1/8). Pro tip: put it in the freezer for half an hour to make slicing easier. ❄️ While the meat is in the freezer, make the marinade: 1 small pear, peeled 1/3 cup coconut aminos 1-2 tbsp honey 1 tsp salt 6 cloves garlic Half a thumb-sized piece of ginger, peeled 2 tbsp gochujang (this is a Korean red pepper paste I don’t have access to down on the farm, so I used some red pepper flakes ??♂️) ? Blend it all together in a food processor or with an immersion blender. ⏲ Put the thinly sliced steak into a gallon ziploc bag or glass baking dish, pour the marinade over it, mix it up, and seal the bag or cover the dish. Refrigerate for 2 hours or overnight. ? Slice up 3 stalks of green onions, about 1/8 inch (optional). ? Heat up some fat (I use bacon fat) in a cast iron over medium-high. As soon as it starts smoking, add steak in single layer batches. Cook until slightly charred, about 2-3 minutes on each side. Add 1/2 tsp of toasted sesame oil after flipping. ? Sprinkle with sesame seeds after plating and eat up! ? Goes well with rice and kimchi. Or, salty pickles!
