For the recipe see below. - 1 clean jar. You can keep those jam jars. They come in handy for a batch of pickles. - Any veggies. Here I used: 1 cucumber, 1/4 red bell pepper, 1/4 green bell pepper, 1 kale leaf. - 200 ml room temperature brine. 5% salinity (200 ml, 10g salt, a drop of vinegar) - If you use cucumbers add tannins. Traditionally the most used one are vine leaves and oak tree leaves. Since I don’t have access to them here I used green tea leaves. Little helpers are always encouraged to join. It helps them build skills for the future and when they are part of the food making process they are more likely to eat. And it also helps you become more flexible with expectations:) And for some final words. Nature provides. When we are in balance with the food choices we make we don’t need those prebiotics. Pickles will do the job for our gut. Just make sure you don’t eat too much. 20g/day is enough. Save the brine. You can use it for salad dressings or to speed up the pickling process for your next batch. Have fun experimenting with the flavours. This is one of the things I still struggle with. On days like this when I don’t choose myself I still go back and try to do a smaller version of what I originally planned. I show up for myself even if I have to readjust my plan and I do it because this is the basis of building the habits that will bring me closer to the future me I want to be. How about you?
