Gluten Free Dairy Free Roll Out Sugar Cookies Makes about 60-70 cookies 1/2 cup dairy free butter, room temperature* 1 cup granulated sugar 2 Tablespoons dairy free milk 2 teaspoons vanilla extract 2-1/2 cups + 1 Tablespoon gluten free all purpose flour** 1/2 teaspoon salt 1/2 teaspoon baking powder Instructions: Preheat oven to 350 degrees F and line 2 cookie sheets with parchment paper. Set aside. In a large bowl, cream together the dairy free butter, sugar, dairy free milk, and vanilla. Add the flour and the salt and baking powder and mix until dough forms. The dough will look crumbly at first, but should be easy to press together to make a smooth and firm dough. Divide the dough into 2 to 4 portions depending on how much dough you want to roll out at once. Wrap the remaining portions of dough in plastic wrap. Lightly dust the counter or pastry mat with gluten free flour and roll the dough portion out until it's about 1/8 inch thick or slightly less. Cut out your shapes with cookie cutters and place on the prepared cookie sheets. Bake the cookies for 6-8 minutes Allow cookies to cool on the baking sheet for about 5-10 minutes then remove to a wire rack to cool completely before decorating
