Instagram Logo“A bit time consuming but sooooo so worth it—freezer aisle scallion pancakes could never.” Scallion Pancakes // @irene_greenbean ???????????⁣⁣⁣⁣⁣⁣⁣ The dough: ▫️3 cups flour ▫️3 tsp salt ▫️1/2 c boiling water ▫️1 c cold water ▫️a ton of scallions (1-2 per pancake) chopped ▫️sesame oil ????????? ▫️Put 1 cup of the flour in one bowl, and the other 2 cups of it in another bowl (you basically just want about 1/3 of your total flour in a separate bowl). ▫️Put 1 tsp of salt into the bowl with the 1 cup of flour, and then the other 2 tsp salt into the bowl w 2 cups of flour. ▫️Combine your 1 cup flour bowl with the 1/2 cup boiling water and mix it roughly (but don’t use your hands bc it’s gonna be super hot and you don’t want to burn yourself!!!!) and then leave it aside for now. ▫️Combine the 2 cup flour bowl with the 1 cup cold water and knead this dough with your hands. ▫️Combine the flour mixed w boiling water with your flour mixed w cold water! And you can use your hands to mix but be careful bc it’ll still be pretty hot. Knead for like 10 minutes and it should look something like the dough in the 2nd picture! ▫️Cover it/put it in a sealed container for at least two hours. ~2 hours later~ ▫️Flour a surface and use some sort of rolling pin, wine bottle, etc. ▫️Knead the dough just a tiny bit so it’s smooth, then chop the dough into like ~4-6 pieces ▫️Take each ball of dough and roll it out suuuuuuper thin. This makes the pancakes flaky at the end!!! ▫️Put sesame oil on it and spread it  (any oil works) over the dough. Then sprinkle on some scallions and a little bit of salt! ▫️Roll the sides up until they meet in the middle and then take that long strip and roll it up as if it’s a snail’s shell, and then turn that cylinder over on its side and press it down and roll it out until it’s pancake shaped. ▫️Cook the pancakes on medium low until golden brown on each side. ▫️My family likes to eat these with vinegar (ironically it’s the exact vinegar bottle I used to roll out my dough, which is this type of Chinese dark vinegar). If you don’t have vinegar you can use soy sauce, chili oil, really whatever you want!!
