๐Ÿ˜‹Hereโ€™s a fast & easy one-pot entree that tastes even better the next day. Serve it with a salad or sprouted grain bread (or both). Yum!


The nutritional yeast (you can find it at most grocery stores) helps give a โ€œcheesyโ€ flavor to this Italian-inspired bean dish.


SPICY ITALIAN BEANS


(Makes 4 servings)


โ— 1 Tbsp olive oil


โ— 4 cloves of garlic, minced


โ— 1 tsp red pepper flakes


โ— Sea salt


โ— 1 15 oz (425 g) can tomato sauce


โ— 2 15 oz (425 g) cans cannellini beans


โ— ยฝ cup fresh parsley


โ— 2 Tbsp (or more) nutritional yeast


In a medium pot over medium heat, heat the oil. Add the garlic, red pepper flakes, and a pinch of salt and saute for about 1 minute, until the garlic starts to soften but not burn. Pour in the tomato sauce and ยฝ cup (120 ml) of water


Stir and reduce the heat to low, allowing the sauce to simmer for 10-15 minutes.


Rinse and drain the beans and stir into the sauce, and allow to warm for 5-10 minutes. Stir in the parsley and nutritional yeast and continue to cook for another 5-7 minutes.


Serve and enjoy!
