Happy Monday! Here is this week’s Healthy Habits Newsletter. I don’t know about you, but personally I find that the summer months are the most challenging for me to maintain my health goals. So many times we fight to get into summer shape, just to let it all go as the temperatures rise.

This summer I am inviting you to participate in a free boot camp focused on building health bodies, minds, and spirits. The boot camp is open to anyone who wants to work on their physical, mental, or spiritual health, regardless of the nutrition plan that they are following. So if you are one of my OPTAVIA clients, or following any other program, I invite you to join us for some fun and accountability. May is Mental Health Awareness Month — a time dedicated to raising awareness and understanding of mental health issues as well as fostering support for mindful behavior. OPTAVIA recognizes the importance of mental wellness as an integral component of health and wellbeing.

Consider these tips to help you prioritize mindfulness this Mental Health Awareness Month:

  • Practice Self-Compassion: Be kind to yourself during tough times. Treat yourself with the same grace and care you'd give a friend.

  • Stay Connected & Seek Support: Dedicate time to the relationships that matter most in your life, whether family, friends or a broader community – like your OPTAVIA Community. Schedule meetups or calls to maintain meaningful connections and find support when you need it.
  • Set Realistic Goals: Break big goals into manageable steps. Celebrate progress and accept setbacks as part of the journey.
  • Limit Negative Information: Stay informed but set boundaries on exposure to negative news or social media. Focus on uplifting sources instead.
  • Fuel Your Body: Prioritize nutrient-rich options for optimal health. Eat nutritious Lean & Green meals and OPTAVIA Fuelings to support both physical and mental health. Remember, you're not alone in this journey.

The warmth of the summer season is rapidly approaching! While warmer weather can inspire a carefree lifestyle in many of us, we can’t forget about our health and sun protection during the upcoming months.

Stay safe, be well and feel your best this summer with these simple tips:

  • Layer on the sunscreen. Use a broad-spectrum sunscreen with a sun protection factor (SPF) of at least 30. Be sure to re-apply at least every two hours and after swimming or sweating.
  • Wear proper clothes and sunglasses for the occasion. Plan for sun exposure by wearing light clothing and a wide-brimmed hat to protect your skin. Protect your eyes with sunglasses, particularly those that block at least 99% of UV light.
  • Avoid the sun at peak hours. Limit your direct exposure to the sun between 10:00 AM and 2:00 PM, when UV rays are strongest. Use this time to catch up on summer reading or play an indoor game with your family or friends.
  • Plan an active vacation. Camping, hiking, canoeing, kayaking, scuba diving and snorkeling are great ways to spend time in natural environments while also getting exercise. If you’re visiting a city, consider renting bicycles or taking a walking tour.

YIELD: 2 SERVINGS

PER SERVING: 1 LEANER, 1 HEALTHY FAT, 3 GREEN, 3 CONDIMENTS

TOTAL TIME: 25 MINUTES

Ingredients

1 lb. boneless skinless chicken breast, cut into strips

¼ tsp each: salt & ground black pepper

½ cup sliced green onion

1 cup thinly sliced red, green, and/or yellow bell pepper

12 large, thin slices jicama

2 tsp olive oil, divided

3 tsp lime juice

3 tbsp salsa

Directions

  1. Season the chicken strips with salt and pepper.
  2. Heat 1 teaspoon of oil in a non-stick skillet over medium heat.
  3. Place the chicken strips in the heated pan and cook until lightly browned, about 5 to 8 minutes.
  4. Add the remaining oil, followed by the onions, to the skillet and stir-fry for about 3 minutes.
  5. Add the peppers, mix well, cover, and cook on low heat for 5 minutes.
  6. Uncover and stir-fry until the onion and pepper mixture is lightly browned (about 3 to 5 more minutes). Remove from heat.
  7. Place 2 jicama slices on top of one another; repeat with remaining jicama slices for a total of 6 doubled-up jicama “tortillas.”
  8. Add about ¾ cups of fajita filling to the center of each set of jicama slices. Top each with a ½ tablespoon of salsa and ½ teaspoon of lime juice. Serve immediately (3 tacos per serving).
