RECIPE: Summer Greek Chicken Bowls

Ohhhhh… this bowl is perfect if you want something quick, delicious, and protein-packed that keeps you full (without heating up your whole kitchen). 👩🍳
Greek Chicken Bowl (makes 2 servings):
✔️ 1 cup cooked quinoa or brown rice
✔️ 1 cup cherry tomatoes, halved
✔️ 1 cucumber, chopped
✔️ ½ red onion, thinly sliced
✔️ 1 avocado, sliced
✔️ 6–8 oz grilled chicken breast (or chickpeas for plant-based)
✔️ 2 tbsp feta cheese (optional)
✔️ 2 tbsp hummus or tzatziki
✔️ Juice of ½ lemon
✔️ Olive oil, salt, pepper, oregano
Directions: Just layer your quinoa or rice in a bowl, pile on the veggies, avocado, and grilled chicken (or chickpeas), then top with a big scoop of hummus or tzatziki.
Drizzle with olive oil and lemon juice, add salt, pepper, and oregano, and boom — lunch or dinner is done.
Serve cold or warm — it’s great either way!
