Holiday Beef & Butternut Squash Stew

Hello, healthy winter comfort food!!! 👩🍳⤵️
If you’re working on building muscle or fueling your body with nutrient-dense meals, this Beef and Butternut Squash Stew is packed with 32g of protein per serving and just 397 calories.
Here’s your recipe (makes 8 servings)👇
Ingredients:
3 Tbsp olive oil
1 large onion, chopped
2 lb lean beef chuck, cubed (grass-fed if possible)
32 oz (907 grams) vegetable stock or grass-fed low-sodium beef stock
2 garlic cloves, crushed
Sprig fresh thyme or dried
Sprig of rosemary or dried
1 tsp sea salt
1 tsp freshly ground pepper
32 oz (907 grams) butternut squash, peeled and cubed
Instructions:
✅ Peel, chop, and crush your veggies and garlic beforehand.
✅ Heat oil in a large soup pot over medium heat. Add onion and sauté for a couple of minutes.
✅ Add beef and brown on all sides.
✅ Add stock, herbs, salt, and pepper.
✅ Lower heat, cover, and simmer for 1 hour.
✅ Add butternut squash and cook for another 30 minutes or until everything is tender.
