Cauliflower Riced Upma recipe

Cauliflower Rice (Kerala-Style Upma)

Ingredients:
- 1 medium cauliflower (riced, ~3 cups)
- 2 tbsp coconut oil
- 1 tsp mustard seeds
- 1 tsp urad dal (optional, minimal carbs)
- 1-2 dried red chilies
- 1 sprig of curry leaves optional
- 1 small onion, finely chopped
- 1 inch ginger, finely chopped
- 1 green chili, chopped
- 2 tbsp grated coconut (unsweetened)
- Salt to taste
- 1 tbsp chopped cashews (optional, for crunch)
Directions:
- Pulse cauliflower in a food processor until it resembles rice grains. Set aside.
- Heat coconut oil in a pan, add mustard seeds and let them pop. Add urad dal, dried chilies, ginger, and curry leaves; sauté for 30 seconds.
- Add onion and green chili, cooking until soft (3-4 minutes).
- Stir in riced cauliflower and salt. Cook for 5-7 minutes, stirring occasionally, until tender but not mushy.
- Mix in grated coconut and cashews (if using). Serve warm.
