Cauliflower Riced Upma recipe

Cauliflower Rice (Kerala-Style Upma)

Ingredients:

  • 1 medium cauliflower (riced, ~3 cups)
  • 2 tbsp coconut oil
  • 1 tsp mustard seeds
  • 1 tsp urad dal (optional, minimal carbs)
  • 1-2 dried red chilies
  • 1 sprig of curry leaves optional
  • 1 small onion, finely chopped
  • 1 inch ginger, finely chopped
  • 1 green chili, chopped
  • 2 tbsp grated coconut (unsweetened)
  • Salt to taste
  • 1 tbsp chopped cashews (optional, for crunch)

Directions:

  • Pulse cauliflower in a food processor until it resembles rice grains. Set aside.
  • Heat coconut oil in a pan, add mustard seeds and let them pop. Add urad dal, dried chilies, ginger, and curry leaves; sauté for 30 seconds.
  • Add onion and green chili, cooking until soft (3-4 minutes).
  • Stir in riced cauliflower and salt. Cook for 5-7 minutes, stirring occasionally, until tender but not mushy.
  • Mix in grated coconut and cashews (if using). Serve warm.
