This delicious and easy-to-make Savory GLP-1 Egg and Veggie Bowl is designed to naturally support your body's satiety hormones, keeping you full and focused.
Ingredients
- 2 large eggs
- 1 tbsp avocado oil
- ½ cup fresh spinach
- ½ cup sliced mushrooms
- ¼ of a medium avocado, sliced or diced
- 1 oz crumbled feta or goat cheese
- Salt and black pepper to taste
- Optional: a pinch of red pepper flakes for a kick
Instructions
- Sauté the Veggies: Heat the olive or avocado oil in a small skillet over medium heat. Add the mushrooms and cook for 2-3 minutes until they begin to soften. Add the spinach and cook until it has wilted, about 1-2 minutes, and season with a pinch of salt and pepper.
- Cook the Eggs: Push the vegetables to one side of the skillet. Crack the eggs directly into the pan and cook them to your desired doneness (scrambled, over-easy, or sunny-side up). Season the eggs with salt and pepper.
- Assemble the Bowl: Transfer the cooked eggs and veggies to a bowl. Top with the sliced avocado and crumbled feta or goat cheese.
- Serve: Sprinkle with black pepper and red pepper flakes (if using) and enjoy your savory, GLP-1-boosting breakfast.
