Kerala Cabbage Thoran 


Prep time: 15 mins | Cook time: 10 mins | Serves: 3-4

Ingredients

  1. Heat coconut oil in a wide pan or kadai over medium heat. Add the cumin seeds, onion, and green chilies
  2. Add the dried red chilies and curry leaves. Let them sizzle for a few seconds until fragrant.
  3.  Toss in the shredded cabbage, coconut flakes, turmeric powder, and salt. Mix well so the cabbage is coated in the oil and turmeric.
  4. Cover the pan with a lid and cook on low heat for 4–5 minutes. The cabbage will cook in its own steam.
  5. Remove the lid and stir everything together. Sauté for another 1–2 minutes on medium-high heat to ensure the cabbage is dry and crunchy.
  6. Remove from heat and serve warm as a side dish.
