Kerala Cabbage Thoran Recipe

Kerala Cabbage Thoran
Prep time: 15 mins | Cook time: 10 mins | Serves: 3-4
Ingredients
- 3 cups Cabbage (finely shredded)
- 1/2 tsp Turmeric powder
- Salt, to taste
- 1/2 cup diced onion
- 1/2 cup dessicated coconut flakes or strings
- 1 Green chilies (slit)
- 1/2 tsp Cumin seeds
- 2 tbsp Coconut oil
- 1 tsp Mustard seeds
- 2 Dried red chilies (broken)
- 1 sprig Curry leaves
Directions
- Heat coconut oil in a wide pan or kadai over medium heat. Add the cumin seeds, onion, and green chilies
- Add the dried red chilies and curry leaves. Let them sizzle for a few seconds until fragrant.
- Toss in the shredded cabbage, coconut flakes, turmeric powder, and salt. Mix well so the cabbage is coated in the oil and turmeric.
- Cover the pan with a lid and cook on low heat for 4–5 minutes. The cabbage will cook in its own steam.
- Remove the lid and stir everything together. Sauté for another 1–2 minutes on medium-high heat to ensure the cabbage is dry and crunchy.
- Remove from heat and serve warm as a side dish.
