How have you tried this healthy low-carb cloud bread?

It's made with fluffy, cloud-like egg whites, hence the name cloud bread.


Ingredients:

  • 4 large eggs separated, room temperature
  • 4 tbsp cottage cheese
  • 1 tsp baking powder
  • ¼ tsp salt
  • ½ tsp spices (optional) - I added chives


Directions:

  1. Preheat oven to 300 degrees F.
  2. Whip the egg whites with 1/2 tsp baking powder until stiff peaks and set aside.
  3. Add the egg yolks in a blender and blend until smooth.
  4. Fold the egg yolk mixture into the egg white mixture a little at a time until it's all incorporated.
  5. Pour this into a parchment-lined and greased 9 by 5 loaf pan.
  6. If making sandwich buns, use a parchment-lined baking sheet.
  7. Bake on the middle shelf of the oven for 50 minutes for the loaf or until a toothpick in the center comes out clean and it's golden brown. Note: If making sandwich buns, bake for 30 minutes and check for doneness.
