Tasty Tuesday: Salmon with pesto and spinach

Salmon with pesto and spinach 

Ingredients:

24 oz salmon

1/2 cup plain full-fat Greek yogurt

1 lb fresh spinach

1 tbsp green or red pesto

1 tsp olive oil

Salt and pepper to taste


Directions:

  1. Preheat the oven to 400°F (200°C).
  2. Spray the baking dish with olive oil or coconut oil cooking spray.
  3. Season the salmon fillets with salt and pepper and place them in the prepared baking dish.
  4. Mix Greek yogurt and pesto and spread over the salmon.
  5. Bake for 15 to 20 minutes, or until the salmon is cooked through and flakes easily with a fork.
  6. Sauté the spinach in olive oil until it’s wilted, about 2 minutes.
  7. Season with salt and pepper. Serve immediately with the oven-baked salmon.
