Salmon with pesto and spinach
Ingredients:
24 oz salmon
1/2 cup plain full-fat Greek yogurt
1 lb fresh spinach
1 tbsp green or red pesto
1 tsp olive oil
Salt and pepper to taste
Directions:
- Preheat the oven to 400°F (200°C).
- Spray the baking dish with olive oil or coconut oil cooking spray.
- Season the salmon fillets with salt and pepper and place them in the prepared baking dish.
- Mix Greek yogurt and pesto and spread over the salmon.
- Bake for 15 to 20 minutes, or until the salmon is cooked through and flakes easily with a fork.
- Sauté the spinach in olive oil until it’s wilted, about 2 minutes.
- Season with salt and pepper. Serve immediately with the oven-baked salmon.
