No-Bake Vanilla Cheesecake
Serving Size: 40g (1.4 oz)
Calories per Serving: ~185 kcal
Ingredients
- 226g (8 oz) cream cheese at room temperature
- 1 Cup Heavy Whipping Cream
- 1 Lemon Zested and juiced
- 3 tsp Stevia or monk fruit, to taste
- 1 tsp vanilla extract
Instructions
- Whisk the softened cream cheese until it's smooth and creamy.
- Whip the heavy cream until soft or stiff peaks form
- Gently fold the whipped cream into the cream cheese mixture.
- Add the sweetener, vanilla, sour cream, and lemon zest or juice, blending until smooth.
- Pour the cheesecake mixture into individual ramekins or a larger serving dish. Cover and refrigerate for at least 4 hours (or overnight) to allow it to set and become firm.
- Top with fresh berries or other desired toppings before serving.
