No-Bake Vanilla Cheesecake

Serving Size: 40g (1.4 oz)

Calories per Serving: ~185 kcal


Ingredients


  • 226g (8 oz) cream cheese at room temperature
  • 1 Cup Heavy Whipping Cream
  • 1 Lemon Zested and juiced
  • 3 tsp Stevia or monk fruit, to taste
  • 1 tsp vanilla extract


Instructions

  1. Whisk the softened cream cheese until it's smooth and creamy.
  2. Whip the heavy cream until soft or stiff peaks form
  3. Gently fold the whipped cream into the cream cheese mixture.
  4. Add the sweetener, vanilla, sour cream, and lemon zest or juice, blending until smooth.
  5. Pour the cheesecake mixture into individual ramekins or a larger serving dish. Cover and refrigerate for at least 4 hours (or overnight) to allow it to set and become firm.
  6. Top with fresh berries or other desired toppings before serving.
