Easy Crockpot Ground Sausage and Cabbage Soup
If you do not have a crockpot you can use this
ingredients
- 1 large head of green cabbage, roughly chopped (about 8 cups)
- 1 pound ground Italian sausage (mild or hot, your preference)
- 1 medium onion, diced
- 2 cloves garlic, minced (you can add more)
- 8 cups chicken broth
Directions
Brown the Sausage (an important step for ground meat)
- In a large skillet over medium heat, brown the ground sausage until no longer pink (about 8-10 minutes)
- Break up the meat into small crumbles as it cooks
- Drain excess fat if desired (can leave some for flavor)
Layer in Crockpot:
- Place the browned ground sausage in the bottom of your crockpot
- Add the diced onion and minced garlic
- Add the chopped cabbage on top
- Pour in the chicken broth (liquid should just about cover the cabbage)
Cook:
- LOW: 6-8 hours
- HIGH: 3-4 hours
- The soup is ready when the cabbage is tender
Before Serving:
- Stir well to distribute the ground sausage throughout the soup
- Taste and adjust seasoning if needed
Pro Tips
- Use Italian ground sausage for the best flavor (it's already seasoned)
- Don't skip browning the sausage - this step is essential for ground meat
- Break up any large sausage clumps before adding to the crockpot
- If using plain ground pork sausage, consider adding:
- 1 teaspoon Italian seasoning
- 1/2 teaspoon fennel seeds
- 1/4 teaspoon red pepper flakes
Storage
- Refrigerator: 3-4 days in an airtight container
- Freezer: Up to 3 months in a freezer-safe container
- The soup may thicken when stored; and thin with additional broth when reheating
