Easy & Flavorful Beef Fajitas

This beef fajita recipe is packed with smoky, bold flavors and comes together quickly for a delicious and healthy meal.


You can eat these as it is.


Ingredients:

For the Beef:
  • 1 ½ lbs flank steak or skirt steak
  • 3 tbsp olive oil
  • Juice of 1 lime
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • ½ tsp chili powder
  • ½ tsp onion powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ tsp crushed red pepper flakes (optional, for heat)
For the Vegetables:
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 medium red onion, sliced
  • 1 tbsp olive oil
  • ½ tsp salt
  • ½ tsp black pepper
For Serving:
  • Fresh cilantro, chopped
  • Sour cream or Greek yogurt
  • Avocado or guacamole
  • Salsa or pico de gallo

Instructions:

  1. Marinate the Beef:
  • In a bowl, whisk together olive oil, lime juice, garlic, cumin, smoked paprika, chili powder, onion powder, salt, black pepper, and red pepper flakes.
  • Coat the steak in the marinade and let it rest for at least 30 minutes (or up to 4 hours for deeper flavor).
  1. Cook the Steak:
  • Heat a large skillet or grill pan over medium-high heat.
  • Cook the steak for about 4-5 minutes per side for medium-rare, or longer for desired doneness.
  • Transfer to a cutting board and let it rest for 5 minutes before slicing thinly against the grain.
  1. Sauté the Vegetables:
  • In the same skillet, add 1 tbsp olive oil and toss in the sliced peppers and onion.
  • Sauté for 5-6 minutes until softened and slightly charred. Season with salt and black pepper.
  1. Assemble & Serve:
  • Garnish with fresh cilantro, sour cream, avocado, and salsa as desired.

Pro Tip:

For an extra smoky flavor, cook the steak on an outdoor grill and char the veggies in a cast-iron skillet!
