Chicken soup can be consumed at any time. I hope you enjoy this warm soup.

Did you know chicken cooked in either a pressure cooker or a slow cooker can be very soft? My favorite is this cooker. It makes the soups enjoyable.


Creamy Chicken Soup with Indian Spices

Ingredients 

  • 2 lb chicken breasts cut into chunks
  • 1 tbsp coconut oil
  • 1 small onion sliced (½ cup)
  • 1 red chili pepper (optional)
  • 1 garlic clove crushed
  • 1 tsp turmeric
  • 1 tsp black pepper
  • 1 tsp salt
  • 1 tsp ground cumin
  • 1 tbsp ground coriander
  • ½ tsp ground cinnamon
  • 2 bay leaves
  • 2 cups chicken stock
  • 1 cup coconut cream
  • 8 oz frozen spinach (thawed) 

Directions

  1. Heat the coconut oil in a saucepan, add the onion, and saute until it starts to change color.
  2. Stir in the garlic followed by the spices (and chili pepper) and bay leaves. Stir as it cooks for about a minute.
  3. Add the chicken, stir to coat, add the stock, bring to a boil then lower the heat and simmer gently for 20 minutes.
  4. Stir in the spinach and bring to a boil.
  5. Add the coconut cream and stir for 2 minutes (continue stirring during this time so that the coconut cream is well incorporated)
  6. Add more salt and pepper if needed.


Steps 3 and 4 can be done in a crockpot, pressure cooker, or this multi-use pot (my favorite)
