Chicken soup can be consumed at any time. I hope you enjoy this warm soup.
Did you know chicken cooked in either a pressure cooker or a slow cooker can be very soft? My favorite is this cooker. It makes the soups enjoyable.
Creamy Chicken Soup with Indian Spices
Ingredients
- 2 lb chicken breasts cut into chunks
- 1 tbsp coconut oil
- 1 small onion sliced (½ cup)
- 1 red chili pepper (optional)
- 1 garlic clove crushed
- 1 tsp turmeric
- 1 tsp black pepper
- 1 tsp salt
- 1 tsp ground cumin
- 1 tbsp ground coriander
- ½ tsp ground cinnamon
- 2 bay leaves
- 2 cups chicken stock
- 1 cup coconut cream
- 8 oz frozen spinach (thawed)
Directions
- Heat the coconut oil in a saucepan, add the onion, and saute until it starts to change color.
- Stir in the garlic followed by the spices (and chili pepper) and bay leaves. Stir as it cooks for about a minute.
- Add the chicken, stir to coat, add the stock, bring to a boil then lower the heat and simmer gently for 20 minutes.
- Stir in the spinach and bring to a boil.
- Add the coconut cream and stir for 2 minutes (continue stirring during this time so that the coconut cream is well incorporated)
- Add more salt and pepper if needed.
Steps 3 and 4 can be done in a crockpot, pressure cooker, or this multi-use pot (my favorite)
