Hereโs a super-easy veggie-packed meal that fits any time of day: breakfast, brunch, lunch, or dinner โ you pick!
The Anytime Salad is loaded with fiber, protein, and healthy fats to support your energy, your gut health, and your taste buds.
ANYTIME SALAD
(serves 1)
๐ซDressing:
3 Tbsp salsa verde
ยฝ Tbsp olive oil
2 Tbsp chopped cilantro or parsley
Whisk together in a small bowl.
๐ฅSalad:
2 cups salad greens
ยผ cup roasted chickpeas
ยผ cup canned black beans, rinsed
ยผ avocado, sliced
1 large egg
Toss half the dressing with the greens, then top with chickpeas, black beans, and avocado.
Spray a small nonstick skillet with cooking spray and heat over medium-high heat. Add the egg and fry to your desired doneness (about 2-3 minutes).
Place the egg on the salad, drizzle with the remaining dressing, and enjoy!
