Can you believe it’s almost Easter? The year so far has been eventful, initially with travelling in Europe and the UK, revelling in the cold and even the snow at times, and then flying back to Oz and landing in the middle of summer. The hot weather lasted all through March, but more moderate autumn temperatures have now arrived.


I have been busy writing since my return, having completed Avenging Angel (started in Amsterdam), Seasons of the Heart (a collection of short stories set in Leavenworth, US), and finally a crime short story. That will be submitted for the Scarlett Stiletto Award with Sisters in Crime later in the year.


I need a break from writing sometimes, and decided to make Easter treats this year. The Easter Eggs I usually buy are quite expensive, especially if buying the better-quality chocolate. I made rocky road the other day, using roasted almonds instead of peanuts, and Turkish Delight instead of Cherries. I threw in some dried cranberries as well for extra interest. This was so easy to make, and quick as well. Scroll down if you would like the recipe.

Easter Treats - Rocky Road and Fererro Rocher


Tonight, I’ve been experimenting with home-made Fererro Rocher. I need more hazelnuts to chop up for the coating on the outside, so will finish them tomorrow. The two treats will go into goody bags for members of my family at our Easter Breakfast.

Rocky Road Recipe

200g milk chocolate

200g dark chocolate

250g marshmallows

1 cup roasted almonds

3 Turkish Delight bars (55g each)


Break up the chocolate and place in a glass bowl. Microwave for 1.2 minutes until the chocolate is melted. Stir and set aside.

Cut marshmallows in half. Kitchen scissors are easiest for this. Chop up almonds and slice Turkish delight.

Add the marshmallows, almonds and Turkish delight to the melted chocolate and mix together.

Pour into a tray (18cm x 27cm) lined with baking paper and spread to the edges. Place in the fridge to chill until set. Chop and serve. Store in an airtight container.


Tips

Can substitute macadamias for almonds.

Can add in ½ cup dried cranberries.

If you don’t like Turkish Delight, traditionally Rocky Road is made with glacé cherries.
