What are the chances of you killing someone with your home canned goods?

When I was a kid growing up in Montana, my mom taught me how to can food. (Now, at the time, being a typical kid, I hated it! But in retrospect I realize she gave me an amazing gift in life skills that I still use today.)


It wasn't until I moved away from home that I found out not everyone grew up like me. In fact, none of my friends knew anything about canning and it shocked me.


Because of the year we just had (and are still having on some levels), home canning is seeing a massive resurgence. In fact, in some areas, it's been hard to find canning supplies!


In talking with folks over the years, I know that one of the big fears they have (if they don't already can) is the possibility of killing someone by feeding them home-canned food containing botulism. While people worry about this, it's actually VERY RARE that it happens--and it doesn't happen at all if you follow the canning directions. If you'd like to know more about this, I wrote this blog post all about it.


Would you like to try canning?


I need your help. I'm putting together some helpful canning resources for people who haven't canned before or aren't confident in their canning abilities. If that's you, please let me what stops you from canning, if you want to but haven't tried it yet? If you've dipped your feet in a bit, but still don't feel confident, what would help you thrive?


And if you're a seasoned canner, I'd love to hear from you too. What kinds of things to do you can? Are there things you'd like to try but haven't?


I've been given a big pile of fresh oranges lately and I'm planning on making orange jam over the weekend (I hope). I've never made that flavor before, but I'm anticipating the lovely color and fresh fruit taste already. I'll keep you posted!
