If you could jar sunshine, this is what it would look like

One sunny day several years ago some friends and I came across a grilled cheese food truck. One of their offerings was a peanut butter, Siracha, fresh basil, curry, and orange marmalade grilled sandwich.


I was intrigued.


Not being one to pass up a unique food opportunity (usually!) I ordered one. It was amazing!


It also changed the way I looked at orange marmalade. Before this point, I thought I hated the stuff. In one bite of that sandwich, everything changed. So, I decided to make my own orange marmalade and can it.


Guess what? Homemade blows the store-bought stuff away. It doesn't even taste like the same stuff.


Are you an orange marmalade lover or hater?


If you don't like it, is it because of the bitter taste with the peels added to it? If so, I have an easy fix for you! This orange marmalade recipe I have gives you the option of leaving the peels (and the bitterness) OUT. Yep. Then all you have is sunshine in a jar.


Now is the perfect time to make orange marmalade as citrus is in season. This makes the fruit sweet and juicy and the prices the best of the year. Here's the recipe to make your own orange marmalade AKA Sunshine in a Jar.
