Drive day eats

Hi ,
When we travel, the last thing we want to do is make food when we park. One of our favorite drive day staples is pot roast. It’s super simple, filling, and our rig can easily run an Instant Pot while we drive!
Ingredients
- 1-2 lb picnic roast (pork or beef)
- 1-2 Tablespoons vegetable oil
- 1 small package of baby carrots (or 2-3 carrots chopped)
- 1 onion, coarsely chopped
- 4-5 cloves garlic (measure with your heart)
- 3-4 stalks celery, coarsely chopped
- 4-6 red potatoes, quartered if larger than your fist
- 2 cups water
- Option 1: 1 packet of pot roast seasoning
- Option 2: ¼ cup apple cider vinegar and 2 tablespoons mixed herbs or herbed salt
Hardware
- Instant Pot, or other programmable pressure cooker
Process
Set your Instant Pot to sear. When it’s hot, drizzle the oil in the pot and swirl it to coat. Put the roast in the pan and let it sizzle about a minute on each side.
Remove the roast, add the water and seasoning, and scrape the bottom of the pot to release any burned flavor bits.
Return the meat to the pot, add all the veggies.
Put the pressure lid on and set the cooker to high pressure for at least 4 hours. When it’s done with the pressure cycle, you can switch to slow cooker low, which ours does automagically.
Once you park, it’s dinner!
