Wimbledon and womens football
I hugely enjoyed Wimbledon. Lots of great tennis, some very exciting matches, and at one point, we were switching between that and the Women's Euros.
There are lots of brilliant newer men players coming through as the old guard retire. Djokovic is the last and his age was evident this year, he just isn't the player he once was any more. Lots of players too cheer for
At the time of writing, the Lionesses are still in the Euros and doing very well, even though sometimes it's a heart stopping experience watching! Wonder if they'll go all the way?
Parents day
I recently went to a parents day at the college Lesley will be going to in the Autumn. They have amazing facilities - a pottery room , a 3d printing room, textiles, all the painting and drawing mediums, a visual arts studio, printing etc etc. The library is huge, the canteen has everything, including a free breakfast and lunch for any student that wants it, no questions asked, which is a lovely thing to do for their students.
I can visualise where she'll be now and I think I'm as excited as she is for it all to kick off!
Eastbourne festival
Horam fun day
Last week we went to the Horam Fun Day on a scorching hot day. Mike wanted to see his Men's Shed pals who had a stall there.
We saw some beautiful vintage cars and wandered round admiring them and peering inside. Then off to admire the birds of prey, which were situated next to the rescue chicken stall much to the latters dismay! The chickens were lovely and we learned a lot talking to the enthusiastic stall holders.
There were lots of books to flip through, plants to smell, hand made items of all sorts and a drum band to jig around too. Lovely day
Mike's walking
He's still improving, but the sciatica is hurting him. We went to see a chiropractor who made it really hurt that day, but the next day it was better. We're seeing him again this week and I need to make sure he does his exercises too.
His truck
We took the Ford Ranger truck that Mike has had for 20+ years for its annual MoT recently and had a horrible shock! Basically the bottom is falling away from the top and it's completely uneconomical to repair, it would cost several thousand pounds.
By the time we left there though, Mike had bought a replacement! A covered back van this time. Not as big as a white van man type van, although he is referring to himself as white van man! He uses it such a lot for all sorts of things and really couldn't be without a practical vehicle like that. It's saved us such a lot of money in various ways over the years.
I've got a couple more new recipes up and have finally got hold of a supermarket cheese and onion deli sandwich filling so I can reproduce it - watch this space!
Crunchy Broccoli Salad
This is a delicious salad that takes just a few minutes to make. I got it from a friend's daughter in Australia. It is creamy from the dressing and has a wonderful balance of flavours, with little pops of sweetness from the currants and savouriness from the sunflower seeds. It doesn’t taste particularly vegetabley strangely, probably because of the dressing, so might be liked by those not especially fond of veg.
Three Bean Salad
Three Bean Salad – an absolute classic dish. It’s super easy to make, is absolutely delicious, can be used as a main or a side and is very adaptable.
Smoked Mackerel Sandwich, with Egg
I love a bit of smoked mackerel and often have a pack in the fridge. This week, I made this simply gorgeous sandwich with some of it, a hard boiled and egg and a slick of mayonnaise. I’d got some hotdog rolls on yellow sticker, so stuffed the mix into there. Oh my – SO good!
Chicken and Sweetcorn Sandwich
Chicken and sweetcorn, with a generous spoon of mayonnaise, a very popular sandwich filling in the UK, and we know why don’t we – it’s gorgeous! Those little pots of deli filling from a supermarket are tasty, easy and convenient, but if you mix just three ingredients together, you can make it at home for a third of the price! You’ll know what’s in it too, and can customise it to your hearts content.
This is part of a series where I attempt to reproduce deli sandwich fillers from the supermarket at much less cost. Cheese and onion will be next if I can get hold of a pot of the stuff so I can see what it tastes like.
