Week One Recipes

Hello, welcome to Keto Go Meals! I hope you enjoy your time with us!
I first want to introduce myself. My name is Isaac and I have been doing keto for 3 YEARS! Over this time I have learned a few thing that I would love to share with you. Every Sunday you will receive one of these emails in your inbox. They will include 3 recipes that I will be cooking for that week. Some will be my own recipes and some will be ones I found that I think you will enjoy. One thing I want to point out is that all of these emails are open for response. I want to hear from every single one of you. I will talk about anything keto or not. I would love to build a relationship with every one of you!
Okay now lets get into this weeks recipes!
Recipes
Egg Plant Casserole
Ingredients
•
1 tbsp Olive oil
•
1 Eggplant
•
2 cup Shredded mozzarella cheese
•
2 cup Spaghetti sauce
•
1 tsp Grated Parmesan cheese (optional)
•
1 tsp Red pepper flakes (optional)
Directions
- Pre-heat Oven 500 degrees
- Slice eggplant into 1/8 inch thick slices & laver on greased casserole dish
- Top that with 2 cups of spaghetti sauce & a layer of shredded mozzarella. (If you want a second layer repeat this process.)
- Bake @ 500 for 15 minutes
- Top with grated Parmesan cheese or red pepper flakes if you enjoy that
- ENJOY!

Spicy Avocado Toast!
Ingredients
2 slices toast
•
2 tsp olive oil to drizzle
•
1 tbsp cream cheese
•
1 avocado ( 1/2 mashed 1/2 sliced)
•
Red pepper flakes
•
1/2 Small tomato
•
1/4 cup salsa
Directions
- Lay toast on plate
- Add first layer cream cheese
- Add layer avocado
- Add layer tomato
- Add layer salsa
- Add red pepper flakes
- ENJOY!

KETO French Toast!
Ingredients
Refrigerated
- 4 Eggs
Baking & Spices
- 2 tsp Baking powder
- 1 tsp Cinnamon
- 1/3 cup Coconut flour
- 1 tsp Vanilla
Dairy
- 4 tbsp Butter
- 8 oz Cream cheese
- 1/4 cup Heavy cream
Other
- 3 tablespoons monkfruit, or other favorite sweetener
Directions
- Preheat oven to 350
- Add all ingredients to a bowl or blender and mix together until cream cheese is fully incorporated.
- Pour into loaf pan with damp parchment paper. Leave a couple of inches of parchment paper hanging over the edges for easy lifting out of the pan.
- Bake at 350 for 45 minutes (firm to touch but will deflate as it cools)
- Cut loaf into desired sizes
- To make French toast, heat griddle or skillet over medium heat. Add 1-2 tablespoons of butter. Fry each slice in the pan or griddle until crisp and browned on each side.
- ENJOY!
