Hey ! I hope you had an amazing week last week. Here is to a brand new week! If you are looking for more pictures, at the bottom of each recipe is a link to that recipe on my blog! This week we are back to three recipes! Next week will be five again!

Keto Fudge
Ingredients
- 1/2 cup coconut oil
- 1/2 cup stevia sweetened chocolate chips
- 1/2 cup cashew butter
Directions
- Place all ingredients together in a double boiler on medium heat until it becomes a liquid. Stir to evenly distribute.
- Place parchment paper in a 9 x 5 inch loaf pan and pour mixture into pan. Refrigerate or freeze until hardened, then cut into about 10 pieces.

Keto Ham
Ingredients
- 100 ml sugar free maple syrup
- 2 tbsp tamari or coconut aminos
- 2 tbsp dijon mustard
- 1 tbsp worcestershire sauce
- 1 whole leg of ham, on the bone
Directions
- Pre-heat oven to 180C/350F
- Combine all ingredients for the glaze in a bowl and stir until smooth
- Use a small sharp knife to score the skin of the ham around the small hock section. Then slowly peel the skin off by pushing your fingers between the skin and the fat and working your way around. Once the skin is completely removed score the fat with diagonal lines. Just be careful not to score too deep into the meat
- Brush the glaze over all the exposed fat on the ham leg and place in the oven for 20 minutes
- Remove the ham from the oven and baste with glaze and return to the oven for 10 minutes. Repeat glaze again and put in the oven for a further 10 minutes
- Baste for a final time, turn the oven up to 200C/400F and cook for a further 5-10 minutes. Keep an eye on it as it may brown quickly

Keto Calzone
Crust
- 1 1/2 cups shredded mozzarella
- 2 ounces cream cheese
- 1 egg
- 3/4 cup almond flour
- 1/2 teaspoon baking powder
Filling
- 1/2 cup ricotta
- 1 cup shredded mozzarella
- 1 cup Italian sausage cooked and crumbled
Topping
- 1 egg
- 1 teaspoon dried oregano
- 1 teaspoon coarse salt
Directions
- Heat your oven to 375°F.
- Add 1 1/2 cups shredded mozzarella and 2 ounces cream cheese to a microwave-safe bowl.
- Melt the cheeses in the microwave for a total of 90 seconds in 30-second intervals, stirring between each interval.
- To the same bowl, add 1 egg, the almond flour, and the baking powder.
- Knead all the ingredients together with your hands until fully incorporated then create a large dough ball.
- Divide the dough ball into 3 equal parts.
- Roll out each of the 3 dough parts into individual 8-inch circles in between two layers of parchment paper.
- Remove the top layer of parchment paper and carefully transfer the bottom layer of parchment paper with the 3 dough circles on it to a baking sheet.
- Mix your fillings (the cheeses & cooked Italian sausage) together in a medium bowl.
- Put 1/3 of the filling on one half of each dough circle.
- Fold the other half of the dough over and seal the edges with a fork.
- Beat the remaining egg with a fork lightly and brush the egg over the top of each calzone.
- Using a knife, make 3-4 slits in the top of each calzone about an inch apart.
- Sprinkle the calzones with dried oregano and coarse salt.
- Bake for 20-26 minutes or until tops are golden brown.
