Happy Valentine's Day (in advance)! We’ve gotten through January. How is everybody doing with their resolutions? Are you sticking to them? Have you made progress? Did you abandon them? Did you not even make any? LOL (no judgment) One of my resolutions is to take better care of myself, mind, body and soul. As always I’m eating healthy but also allowing myself to have those meals that are not so healthy. I’m not depriving my body of them. I’m also moving my body more. As you guys know I live in Buffalo, NY where the winters are brutal. At times it’s too cold to get moving outside so I created a little list of ways to get your body moving that can be done both indoors and outdoors.
Valentine’s Day is around the corner. Most people have a dinner date to celebrate the holidays but if you are on a budget (who isn’t these days) you can make a quick and delicious meal at home. Here are a few ideas to get you started:
- Breakfast for dinner. Everyone loves breakfast for dinner, and who wouldn't like heart shaped pancakes.
- Eggs Frittata. So simple and easy. Add eggs, meat, vegetables, cheese... look up some cool ideas and sprinkle some of our adobo or sofrito on top, just yum!
- One pan meals. Easy to make and easy to clean up.

Savory Roasted Chicken and Vegetables
Ingredients:
- 6 medium red potatoes, cut into 3/4-inch pieces
- 1 large onion, chopped
- 2 tbsp. olive oil
- 3 garlic cloves, minced
- 3/4 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tbsp. Healthy Rican's Savory Spice Mix
- 1 whole chicken or 6 bone-in chicken thighs (about 2-1/4 pounds)
- 6 cups fresh baby spinach (about 1 bag)
- 1 tbsp. juiced lemon, optional
- Additional salt and pepper to taste
Directions:
1. Preheat the oven to 425°F. In a large bowl, combine potatoes, onion, oil, garlic, salt and teaspoon pepper; toss to coat. Transfer to a roasting baking dish, or a 15x10x1-in. baking pan for the thighs, coated with cooking spray.
2. Sprinkle the chicken with the Savory Spice Mix, add the lemon juice if desired, coat evenly over and under the skin. Arrange the chicken over the vegetables. Roast until a thermometer inserted in chicken reads 170°-175° and vegetables are just tender. Time varies depending on the chicken, see roasting times below.
3. Remove chicken to a serving platter; keep warm. Top vegetables with spinach. Roast until vegetables are tender and spinach is wilted, 8-10 minutes longer. Stir vegetables to combine; serve with chicken. If desired, add additional salt and pepper to taste.

Chicken Roast Times:
- Bone-in chicken thighs: 30-35 minutes at 425°F
- 3lb chicken: 12 minutes at 450°F + 60 minutes at 350°F = 72 minutes total
- 3.5lb chicken: 12 minutes at 450°F + 70 minutes at 350°F = 82 minutes total
- 4lb chicken: 12 minutes at 450°F + 80 minutes at 350°F = 92 minutes total
- 4.5lb chicken: 12 minutes at 450°F + 90 minutes at 350°F = 102 minutes total
- 5lb chicken: 12 minutes at 450°F + 100 minutes at 350°F = 112 minutes total
Move that body!
I know we’re all busy but we definitely benefit from moving our body. It’s not just physical benefits but it’s also mental and emotional too. Here’s a list of some mindful movements to do during the Winter season.
- Stretching- Spending a few minutes each day stretching can help you stay limber throughout the winter and also give you some time to be mindful.
- Yoga- Yoga can be done anywhere with little equipment and can help you focus on your breath and promote relaxation. There are plenty of great videos on YouTube.
- Tai Chi- This gentle martial art can help reduce stress and promote a sense of balance and well-being.
- Pilates- Focusing on stretching, breathing and alignment can help you stay focused on the present moment.
- Walking- Going for a walk in nature can help you leave your stress behind and help you connect more deeply with yourself and the present moment.
- Dancing- Put on some of your favorite music and let your body have fun! Dancing can be a great way to move your body and cultivate inner stillness.
