A Taste of History: The Story of Sofrito

Sofrito has been a culprit in Latin and Caribbean cuisines for generations, and used as a flavorful base in most traditional dishes. Even countries like Spain and Italy have their own version of Sofrito. And just like cooking and many traditions, every family and household has its own unique recipe. Typically it’s made with fresh herbs and aromatics, including garlic, onions, peppers, culantro/cilantro, and more. 


Our unique blend is a dehydrated version of this staple, and can be used as a seasoning, or hydrated with water to use for all your cooking needs. One of the best things about our Sofrito is that it’s dry and shelf-stable! This means you can store it easily in your pantry and rehydrate as needed, making it a convenient option for any meal.

Featured Recipe

This week, we’ll be sharing a nutritious and flavorful recipe for POLLO ASADO (Baked Chicken) with Sofrito. This dish combines the rich, savory flavors of Healthy Rican Sofrito along with adobo and vegetables, creating a healthy meal that’s perfect for any day of the week.

Baked Chicken (Pollo Asado)


Ingredients:

3-4 garlic cloves, minced

½ lime, juiced

2 tbsp adobo

1 tbsp sofrito

2 tbsp olive or avocado oil

1 whole chicken

Mixed vegetables of choice (onions, peppers, zucchini, carrots, etc.)

Note: You can also add chopped potatoes for a delicious hearty meal. 


Directions:

Prepare a marinade for the chicken. Start by mincing the garlic in a mortar and pestle, then add the lime juice, adobo, 1 tbsp of the sofrito, oil and mix well. Place the whole chicken on a baking dish, and pour the marinade over the chicken and spread inside, out and in between the skin. Add the vegetables inside, and around the chicken. Marinate for as long as you like in the fridge, or cook right away.


Preheat the oven to 350 degrees F. Once the oven is ready, cook the chicken for approximately 1 hour and 20 minutes (depending on the weight) or until the breast or thigh reaches 165 degrees F internally.


Note: You can also prepare a dressing to add over the chicken. This dressing can be used as a “chimichurri sauce” over meats and vegetables. To make, just hydrate 1 tbsp of Healthy Rican Sofrito with 2 tbsp of water. After a few minutes, add 2-3 tbsp of olive oil, 1 tbsp of lemon juice and a pinch of salt or adobo. The longer it’s hydrated, the better it tastes.
