Hi ,


Llego el Verano!! It’s almost mid-year, how are you doing? Any fun plans for this Summer? I personally don’t have much planned out after my trip to Puerto Rico, which was amazing. The main purpose of my visit was to attend “La Experiencia RIO”. A women's retreat hosted by Rebeca Huffman, Ivelissa Rios and Omallys Hopper from Cooking con Omi. Three beautiful Boricua women, coming together to empower other women, and share cultura on social media. 


It was a beautiful experience, and I feel honored and blessed to have been able to attend. Meeting all the ladies, the energy of the event and the miracles that happened were just surreal. I witnessed women coming in that were going through depression, illnesses, suffering from the loss of family members, and by the end, walking out full of joy and inspiration. We didn’t just go to an event, we found new friends, motivation, hope, and most importantly, sisterhood!

Recipe of the Month

Here's a simple and refreshing recipe for an Easy Mango Salad:

Ingredients:

2 ripe mangoes, peeled, pitted, and diced

1 red bell pepper, diced

1/2 red onion, thinly sliced

1/4 cup fresh cilantro leaves, chopped

1 jalapeño pepper, seeded and finely chopped (optional, for added heat)

Juice of 1 lime

2 tablespoons olive oil

Salt and pepper to taste


Directions:

  • In a large bowl, combine the diced mangoes, diced red bell pepper, thinly sliced red onion, chopped cilantro, and finely chopped jalapeño pepper (if using).
  • In a small bowl, whisk together the lime juice and olive oil to make the dressing. Season with salt and pepper to taste.
  • Pour the dressing over the mango mixture in the large bowl.
  • Gently toss the salad until all the ingredients are evenly coated with the dressing. Taste and adjust seasoning, if necessary.
  • Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld together.
  • Before serving, give the salad a final toss and transfer to a serving dish.
  • Garnish with additional cilantro leaves, if desired.


This mango salad is perfect as a side dish for grilled meats or seafood, or it can be enjoyed on its own as a light and refreshing snack or appetizer during the summer months. Enjoy!

We are getting close to launching our new packaging! As you may know, I decided to upgrade our Large Sofrito jar due to manufacturing concerns. Well I have to say, I’m in love with this new pouch. This is in a way our pilot trial. If this is a success, we will offer all the other blends in a large refill size pouch. Perfect for those who love aesthetics and own a set of glass jars that they can refill. Or for current customers that love to stock up. I’m not sure when it will be ready for launch, but stay tuned for the announcement!
