 Happy October and Happy Halloween. I love Halloween!! There's just something about the pumpkin spice aroma, curling up under a blanket and watching a spooky movie that does it for me. I love the Fall!! This is my season. In the beginning of the year I set out to reach certain goals for Healthy Rican and I’m getting closer to hitting them. The Fall is a feeling of being in the home stretch for me. Leaves are changing into beautiful colors and it’s the same for Healthy Rican! On the menu is soup, stews and all things roasted. Plus some warm apple cider and hot chocolate! Helloooo did someone say Chocolate Cortés… 😁 IYKYK.


Let’s Get Cooking!

Speaking of roasting, I love the taste of roasted vegetables. Something about the crunchy exterior, but hot soft interior that makes me happy. Potatoes, Pumpkin, Cauliflower, Brussel Sprouts, Squash and more. As a side dish, mixed vegetables on a sheet pan, along with Chicken or Beef the options are endless. Here’s a Roasted Squash Recipe to get you started. 


Ingredients: 

  • 1 small butternut squash (chopped into small squares)
  • 3-4 tbsp olive oil
  • 2 tbsp Healthy Rican Sofrito
  • 1-2 tsp Healthy Rican Adobo
  • Note: Amount of seasonings vary depending on the size of the squash


Directions: 

  • Peel and chop the squash into desired sized squares. These can be oven roasted or cooked in the air fryer. If using the oven, preheat the oven to 350 degrees.
  • In a large bowl, add the chopped squash and drizzle in the olive oil. Add the dry sofrito, adobo and mix well.
  • Transfer the smothered squash to a flat oven safe pan, or cookie sheet pan.
  • In the oven, roast for 10 minutes, turn around and cook for 10 more minutes on the other side. Use your discretion as every oven is different, and the thickness of the squash can also change the cooking times.
  • In the air fryer, it takes about the same time as the oven, again use your discretion.
  •  Note: You'll want the squash to be golden brown and crunchy on the outside, but soft on the inside

 Season 2 of Tasty Thursdays


Season 2 of Tasty Thursdays is in full swing! Our first episode premiered on September 15th and our guest was Sabor with Love. We had an amazing time chatting and getting to know each other. It was an honor for us to have them on our page. If you missed it, here is the replay.
