Hola Familia!
How are we already 2 months into 2023? Wow! Time does fly when you're having fun. How's it going for you? I’m here packing to fly to Florida and I still can't believe it. I recently won tickets to go see Rauw Alejandro with Jannese from @yoquierodineropodcast Woohoo! I’m so excited.
While in Florida, I also have the opportunity to meet one of my favorite influencers and pioneers as Puerto Rican content creators. Can you guess who? Follow my journey on the @HealthyRican stories.
Have I ever shared the power of being in alignment and manifestations with you?
If I haven’t, I’m going to start sharing more because this has truly changed my life. If it wasn’t for the power of being in alignment, Healthy Rican wouldn’t exist today. I first started sharing my journey and the power of alignment and manifestation at @nutritriondork. Check out my older posts.
Being in alignment means walking your path in life with the power of answered prayers, following your gut instinct, meaning listening to that little voice inside of us that knows what is right, setting intentions/goals, and walking in faith.
This has been the key for me to follow what my heart desires which lead me to study nutrition, start my business, and launch Healthy Rican. Also lead me to write my book, know when to call it quits, and continue to trust that God and the Universe have my back.
When I found out that Jannese was hosting a giveaway, it was 11:10pm on Friday, February 10th. The submissions were ending at 11:59pm that night! I felt that gut instinct. Something was telling me to enter the giveaway. I almost ignored it as the other voices (the ones I like to ignore) were saying “how are you getting to Florida on such short notice?” and “is it really necessary?”. But my gut feeling was stronger. So I said, alright! Let’s go to Florida and have fun then. It was 11:30 pm when I submitted my entry.
The next day I listened to Rauw Alejandro’s playlist all day. You know, to get my dance moves ready. And Boom!! On Monday I found out I won. My first thought was “I knew it!” I knew my gut feeling never fails. I take this as a reminder. Last year, I allowed myself to be driven by stress. I felt unaligned, and my body was definitely taking the hit. This year, I decided to move once again in alignment and faith. I already started feeling better, things started happening, opportunities started to open up, and I couldn’t be more grateful.
This experience has lit a fire under me. As I set goals for Healthy Rican, I feel the love from the divine, and more trust than ever in the power of alignment. I’m really excited for what’s to come, and I wanted to share with you. A big part of Holistic Health & Wellness is being in alignment with ourselves (mind, body and spirit), and as a coach I feel empowered to share my experiences in hopes I can inspire others to do the same. Soon, I’ll be opening up my schedule and start coaching again. It’s within my heart's desires, and I must see it though. As part of my insiders tribe, I will keep you posted in case my message resonates with you.
Now let’s get cooking….
Recently I created a recipe for Whole30 and made a video for them to share. I’ve actually never made it before, I made this dish for the first time (without a recipe) right in front of the camera. I just knew it would be good! I want to share the recipe with you (before it hits the Whole30 page), with an added ingredient. For the recipe to be Whole30 approved, it couldn’t have cheese. But cheese will take it to the next level… So let's do it!
Meat & Plantains Stuffed Peppers
Ingredients:
- 6 large sweet bell peppers (any color)
- 2 ripe plantains
- 1 lb. ground beef
- ½ cup chopped onions
- ½ cup chopped peppers (use the top part that is leftover from the 6 peppers)
- ¼-½ cup chopped cilantro
- 2-3 garlic cloves (minced)
- Healthy Rican’s Adobo, Sazón & Sofrito (1-2 tsp each)
- ¼-½ cup tomato sauce (if desired)
- 1 cup shredded cheddar cheese (or cheese of your choice)
Directions:
- Rinse the peppers and cut the top part of the pepper. Do not throw away the edges around the stem, we will chop that part and use in the meat.
- Remove the seeds and rinse again inside and out.
- In a large pot, big enough to add all the peppers, add water and bring to a boil. Boil the peppers for 2 minutes.
- While the peppers cook, peel the plantains, chop into small pieces or slices, and bake at 350 degrees for 20-25 minutes, or air fry for 10-15 minutes. The cooking time varies depending on the thickness and ripeness of the plantains. Cook at your discretion until the plantains change color to a brighter yellow and are soft inside.
- Cook the beef in a pan on high heat. I choose a 90/10 ground beef to reduce straining the fat. Add the meat, onions, chopped peppers, cilantro, garlic and seasonings. Allow everything to cook on medium/high heat while stirring occasionally.
- Once the meat has browed and vegetables are soft, add the tomato sauce if desired. Then add the cooked plantains and mix all together.
- Stuff the peppers with the ground beef mixture, top with cheese and bake for 10-15 minutes or until the cheese is melted.
- Enjoy with a side salad with the Healthy Rican dressing!

Finding a great tasting salad dressing at the grocery store, that is not full of sodium and preservatives, is almost impossible. Unfortunately most store bought dressings are full of unhealthy fats, artificial colors and ingredients, not to mention packed with sodium. Plus, the few dressings that are available, many times are not accessible to everyone.
Here I share how to make my new favorite creation for salads, meats, and more. It’s like Italian and honey mustard dressings had a baby. Plus a Texas Roadhouse Italian dressing copycat, chicken, pasta salad and more.

She is a plant-based coach that teaches you how to incorporate more plants as the main source of nutrition, while including our favorite cultural dishes.
