I hope all the amazing moms out there had a beautiful and memorable Mother’s Day, surrounded by love, familia, and, of course, delicious food. 💐
As I reflect on the meaning of Mother’s Day, I can’t help but honor where it all began; my grandmothers and my mom. They are the heart and soul behind Healthy Rican. Their love, traditions, and recipes are what inspired me to create this brand.
For me, almost all my fondest memories with my grandmothers and familia revolve around food. It’s the reason Healthy Rican is so close to my heart. Everything I do comes from a place of love, culture, and community… and that includes you!

📖 Recipe Inspiration:
In honor of my mom, let’s make; Mami’s Habichuelas Guisadas with Healthy Rican 🌱
Ingredients:
• 2 tbsp Healthy Rican Sofrito
• 2 tbsp Avocado oil
• 2 tbsp Tomato paste
• 1 tsp Bouillon
• 2 tsp Healthy Rican Sazón
• 2 tbsp Diced onions
• 1/2 cup Diced squash, calabaza (can also use diced potatoes)
• 2 cans Pinto beans
• 2 cups Water, use your own discretion depending on the thickness desired
• Optional: 1 Green plantain, for added flavor
• Salt to taste
Directions:
1) For the Sofrito: Mix the dehydrated sofrito with ¼ cup water and let it sit for a few minutes.
2) Add the oil to a medium pot. On high heat, stir fry the sofrito.
3) Quickly add the bouillon, sazón, tomato paste and a bit of water.
4) Stir until well combined and allow to simmer for a few minutes
5) Add the onions, squash, beans and remaining water (use your own discretion).
6) Cover and cook on low heat until the squash is cooked through and the sauce has thickened.
7) For the optional plantain balls: Peel and chop the plantain. Add to a blender with a pinch of salt and oil as needed to blend. The consistency should be sticky but not too runny. Make little balls with your fingers (they do not need to be perfect) and add to your beans right after the liquid comes to a boil. Cook covered on low until the plantain balls and squash are completely cooked.
8) Enjoy with a side of white rice! 🍚
