Happy Labor Day!! How was your summer? I can’t believe it’s over and Fall is knocking on our door. Here in Buffalo NY, it has already begun to feel like Fall, weather-wise. In a way, I’m kind of glad. Fall is by far my favorite season. And after the hectic Summer I’ve had, I’m excited to enjoy some warm soul food meals and curl up under a blanket at the end of the day.
This Summer I finished my Certification in Hormone Health. It’s an advanced course for Integrative Nutrition Health Coaches. Being a Nutrition Dork means I absolutely love continuing my education in Holistic Health. I hope to start my own coaching practice in the near future and serve women as they navigate through their Health & Wellness journeys.
Well, now it’s time to put away the grill and break out the soup pots. I love soups and one-pot meals. They’re easy to make and time-saving. It’s great on those days when you want to enjoy outdoor activities. One of my favorite one-pot meals is Arroz con Pollo (Chicken with Rice). It’s delicious, cozy, and warms your belly. All the feels that come along with the Fall.
Here’s an Arroz Con Pollo Recipe I found at the back of a Colombian Rest. place mat. I recently made it with the Healthy Rican Twist, and it was delicious! I will share on social media soon, but as part of my email list, you get first dibs.
Ingredients:
- 1 lb. boneless chicken in chunks (can be breast or thighs)
- 1 tbsp. Healthy Rican Adobo
- 2 tbsp. avocado oil
- ½ cup chopped onion
- ½ cup chopped peppers (any color)
- 1 tbsp. garlic paste
- ¼ cup tomato sauce
- 2 tsp Healthy Rican Sazón
- 1 tbsp. Healthy Rican Sofrito
- 3 cups jasmine rice (or medium white rice)
- Salt to taste
- ½ cup peas and carrots
- ½ cup chopped fresh cilantro
Directions:
- Marinate the chicken with the adobo at least 1 hour before cooking.
- In a medium/large pot or caldero, add the oil, and on high heat, cook the chicken for about 1-2 minutes on each side. Add the onions, peppers and garlic, cover and cook for 2 minutes until the chicken releases its juices.
- At this point you can remove the chicken (or leave in) as it won’t change the flavor but makes it easier to add the rest of the ingredients. Then add the tomato sauce, sazón, sofrito, and mix well. Quickly add the rice and water until the rice is completely covered (about ½ inch above the rice). At this point you can add salt and taste to see if you like the flavor. Add more salt or seasonings of choice as needed. Add the chicken on top if you removed it, and the peas and carrots at this time.
- Allow the water to come to a boil, and once the liquid is almost gone, add the cilantro, and mix well from the bottom up.
- Reduce the heat, cover, and cook for 20 minutes until the rice is cooked. Enjoy!!
