Hi ,
Happy New Year and Feliz Dia de los Reyes! I hope you had a wonderful holiday season and are ready for the New Year. This is the time most people reflect on the year that has passed and focus on what they want for the New Year. I’m not sure if you saw my 2022 recap reel but I definitely reflected on this past year. I admitted that while I achieved many great things for HealthyRican I neglected my personal needs. I was stressed out, and not taking care of myself. I can’t do that, and won’t do that to myself anymore.
With this new year I am committed to taking care of myself - mind, body and soul. I’m currently participating in another round of Whole30. If you want to learn more about Whole30 you can check out their site. I’ll be creating and sharing my recipes as always on my social media pages. I’m also committing to bringing you more health conscious content. This new season of Tasty Thursday will feature guests from all areas of healthy living.
Recipe from our friend The Salty Cooker
We love when friends of ours create recipes using our seasonings. This Shredded Beef taco recipe from our friend Danielle aka The Salty Cooker is amazing!! I actually followed the recipe yesterday, and the flavor so good. You can learn all about her and her wonderful recipes here.
Ingredients:
2-3lb beef chuck roast
2 tsp kosher salt
3 cups beef stock
1 orange juiced
1 lime juiced
1/2 tsp black pepper
2 tbsp HealthyRican Sofrito Seasoning
28oz can diced tomatoes
1 onion, diced
1 jalapeno, diced
1 tbsp olive oil
2 tsp garlic, minced
Directions:
Preheat the oven to 350 degrees. Place a large dutch oven over medium/high heat. Add the olive oil and let it heat up for a few minutes. Season both sides of the chuck roast with sofrito seasoning and 1 tsp of salt. Sear both sides of the roast. Add the rest of the ingredients to the pot and stir some. Bring to a boil, cover and place in the oven for 3-5hrs until fork tender. Remove, shred in the pan.
Tacos fresh cilantro, cheese, lime, jalapeno. Top your tacos with your favorite toppings and enjoy!

Directions:
In a large pot, add 2 chopped up sweet potatoes, 2 chicken breasts, 1 chopped red pepper, 2 tsp of each Healthy Rican Adobo, Healthy Rican Sazón and Healthy Rican Sofrito, 1 cup of salsa, broth to cover, and cook for 12 to 15 minutes. Shred the chicken, top with cilantro and enjoy with a side of tostones.
Tasty Thursdays 2023!
Tasty Thursdays is back with a brand new season! This season we are focusing on all things Healthy. Mind, Body and Soul. To kick off this season we will be chatting with Zariel Grullón, RDN, CDN. I came across her profile on Instagram and immediately reached out to her because her username spoke to me. She’s loveyourchichos on Instagram. Ha, IYKYK. We got to chatting and realized we have a lot in common. It was a no brainer to have her be a part of our Tasty Thursday series.
Zariel is from Jersey, currently living in The Bronx. She is Dominican American. Cooking was always a big part of her life, she remembers hearing stories of her mother learning how to cook at a young age and having her continue that tradition by teaching Zariel how to get around in the kitchen was a big part of her journey to getting confident in the kitchen. Her love for food as well allowed her to be curious of different cuisines around the world which also affects her cooking.
When Zariel initially learned about nutrition she wanted to “healthy-fy” our cultural foods because that’s what we were taught in school. As she continued to learn about nutrition, the history of our foods and the way research is done in the world of nutrition she had to decolonize those beliefs and relearn that our foods are nutritious and delicious and that all foods fit. Zariel feels that her job as a non diet dietitian is to help folks relearn that as well and honor their culture through food. Zariel tries to do that through her work and her platforms by highlighting the positives and not so positives of our culture and telling the story of growing up as a Latina with diet culture in America.
