How are you doing? Now that we celebrated Memorial Day it’s the unofficial start of Summer and I don’t know about you but I’m ready for it! Here’s a fun fact about me: I'm always cold. I live in Buffalo, NY and the winter season is brutal. I’m happy Summer is here! Bring on the sun, bring on the heat, and break out the grill!
Most people tend to eat lighter during the Summer season. They also tend to eat more fruits too. This can be because most markets display fruits that are in season closer to the entrance of the produce section. It can also be nostalgia, perhaps the fruits remind them of a vacation they took. Whatever the reason, the fact is fruits are good for you. Fruits are sweet and do have sugar, but the sugar is natural which our body easily digests at a slower rate, unlike refined sugar which causes an immediate blood sugar spike.
Here’s a recipe that I’ve been playing around with during these warmer days…
Healthy “Ice Cream!”
- 1 can full fat coconut milk (unsweetened).
- 2-3 tbsp. date or maple syrup (or other healthy sweetener of choice).
- 1 cup frozen fruit (raspberries and mango are my favorites).
- Blend together in a food processor or blender. Add to a freezer safe bowl and chill until firm and easy to scoop. It takes a few hours (sorry).
- Tip: If you like bananas, you can freeze overripe bananas, and use those as well (instead of sweetener). This will make the “ice cream” even creamier, and a thicker consistency (which will speed up the chilling process).
Have fun making this with different fruits! Enjoy!
