Well, I’m excited for February to be here because I’m on my way to Puerto Rico. Wepa! While I go every year, each time is as exciting. Especially now that we are going to represent Healthy Rican en la Isla del Encanto.

Mark your calendars! On February 9, 2025, Healthy Rican is bringing the bold, authentic flavors and our full time of products to Vegan Paradise Fest. There will be samples, cooking demos and more.

Our full line of seasonings and spice blends are perfect for adding rich, comforting flavors to any vegan dish. They are great on roasted vegetables, tofu, or jackfruit to recreate classic flavors with a nutritious twist.

We’ll be going live from Puerto Rico and sharing exclusive content from the event, so be sure to follow us on social media for updates, behind-the-scenes moments, and more.

If you're attending the festival, keep an eye out for exciting ways to incorporate our seasonings into plant-based meals. And if you can’t make it, no worries—tune in on social media and check out our website for delicious recipes and inspiration.

Here’s a quick vegan recipe you can make at home. I’ve made this before, and my son who loves gazpacho couldn’t even tell the difference. It's a win-win!

This recipe was featured on our blog where we talk about making bacalao and Puerto Rican Gazpacho. You can check out the full blog here.

Plant Based Gazpacho Salad

Ingredients:

  • 1 cup cooked artichokes
  • 1 tbsp chopped seaweed (or nori), optional but recommended to get the fishy flavor of gazpacho). Can be found in Asian markets, or local health food stores.
  • 1 medium avocado, chopped
  • 1 medium tomato, chopped
  • 1/2 small onion, chopped
  • 1/4 cup olive oil
  • 1 splash lemon or lime juice
  • Salt and pepper to taste

Directions:

To cook the artichokes, just boil until soft. Add all the ingredients to a large bowl, and mix well. Add salt and pepper to taste and additional olive oil if preferred or needed. Enjoy immediately as a salad, in a roll as a sandwich, or paired with your favorite rice.

Hasta pronto! Talk to you soon and I’ll see you on social media desde Puerto Rico.

Warmly,
