Featured Recipe: Mexican Inspired Yellow Rice

Ingredients:

  • 1 cup corn (raw from the cob or frozen)
  • 2 tbsp olive or avocado oil
  • 2 cups medium grain rice
  • 2 cups water
  • 2 tbsp sofrito
  • ¼ cup tomato sauce
  • 1 heaping tablespoon of Healthy Rican Sazón
  • 1 tbsp chicken bouillon (Better than Bouillon)
  • Salt and pepper to taste
  • ½ a bundle of cilantro, chopped
  • Optional: Add additional seasonings for extra heat like cayenne or chili peppers. 


Directions:

  • Heat up the oil on medium heat and saute the sofrito, tomato sauce and seasonings together. Add the rinsed rice and let it toast up for about 5 minutes giving it a couple turns in between.
  • Add the water, salt, and chicken bouillon. Stir to incorporate, try the liquid to make sure it’s to your liking and add additional seasonings at this time. Allow it to come to a boil. Once the liquid is almost gone, give it another stir, top it with a layer of the corn, lower the heat to low, cover and cook for 20 minutes (do not remove the cover before then). 
  • Once the 20 minutes have passed, add the cilantro and toss and serve!
