!Hola Familia!


Hi ,


Nos fuimos!? Saludos mi gente… How did your Spring go? And how is your Summer starting? Between graduations, vacations, cookouts and family gatherings… things can seem busy sometimes, but it’s all in good fun right? I love Summer! Fall is still my favorite season, but Summer is a close second. The warm and sunny days just bring me joy. I can’t wait to move down south in the near future (insert praying emoji, lol).


I’m over here getting ready to visit Puerto Rico next week. Wepa! In addition, I’m celebrating my 1st week as a full-time entrepreneur (God is good). I sometimes have to pinch myself. I’ve been dreaming about having my own business ever since I can remember. My journey started at a young age selling handmade rosaries in middle school. I’ve been in business ever since. Those that know me well would say: “Tu le vendes hielo a un esquimal”, meaning I could sell icicles to an Eskimo. It’s a saying in Puerto Rico that means that you can literally sell anything to anyone. While I don’t agree, I find it funny. I don’t like selling just to get a sale, I need to really believe in the products and services I’m providing. Whatever business, it has to have meaning and purpose for me. :) 


Puerto Rico aquí voy!

I can’t wait! The main purpose of my visit to the island is to enjoy ‘Yo Quiero Dinero: Our Money Our Power Event’. It’s hosted by Janesse Torres, a powerful Latina that I really admire. She’s the owner of Delish D’Lites Blog and Host of the ‘Yo Quiero Dinero Podcast’. Recently I had an interview with her, and the episode should air sometime in June. Check out her work HERE.  

I’ll be staying in PR for 2 weeks. In addition to the event, my focus will be to network with other entrepreneurs, build relationships and most importantly make the connections in order to support local businesses. I'll also be creating some content while I’m there. Stay tuned as I have lots in store for Healthy Rican in the near future.

So what’s cooking?

Cool Summer dish: Southwest Chicken Salad


For the salad:

1 lb. cooked, shredded chicken breast 

1 cup sweet corn, canned 

1 cup black beans, canned, drained, rinsed 

1 small red onion, diced 

¼ cup cilantro, chopped 

1 red bell pepper, diced 


For the dressing: 

½ cup (120g) Greek yogurt 

1 lime, juiced 

½ tsp. sazón

½ tsp. chili powder 

¼ tsp. adobo

2 tsp. sriracha

 

Directions: 

Place the shredded chicken, sweet corn, black beans, red onion, fresh cilantro, and red pepper into a large bowl. Mix and set aside. Make the dressing by mixing all the dressing ingredients in a cup. Add dressing to the salad and mix until well combined.


This would be great on top of a bed of greens, or with a side of tostones.
