Welcome back to the fourth email of this series! We’re continuing the celebration and bringing you an amazing deal this week. It’s time to put the spotlight on a product we created in collaboration with a fellow Latina entrepreneur, in a long line of successful trailblazers.
A couple of weeks ago, I traveled to Los Angeles and had the opportunity to visit a local favorite, Porto's Bakery. It was founded by an inspiring Latina, Rosa Porto. Rosa started baking from her home after she fled Cuba and used her skills to support her family. What started as a small, home-based business has grown into one of the most beloved bakery chains in Southern California. Bringing life and prosperity to many neighborhoods with delicious Cuban-inspired baked goods. Rosa's story is inspiring, and it fills my heart to see women pouring their heart and soul into creating something special that supports families and communities.
Just like Rosa, we aspire to create a business that supports women, families and our communities. Which is why we love collaborating with amazing and talented entrepreneurs, chefs and content creators. As a woman founded a business, supporting mujeres emprendedoras aka boss ladies, is at the core of what we do.
Spotlight on Rebeca Huffman x Healthy Rican’s Taco Tuesday
As many of you know, we launched a collaboration with Rebeca Huffman last year, and during this Hispanic Heritage Celebration, we’d like to spotlight one of our favorites, the Taco Tuesday Seasoning.
Created by Rebeca Huffman, in efforts to serve her family a healthier alternative. Rebeca created this blend due to her daughter’s food allergies. Store bought seasoning packets were causing her to break out in hives. Rebeca knew she had to take matters into her own hands. That is how Taco Tuesday was born. This blend features all the flavors of a taco seasoning, minus the artificial ingredients, preservatives, fillers and high sodium content found in most packets found in stores.

Featured Recipe:
Tacos de Pollo (Chicken Tacos)
This chicken taco recipe is inspired by the tacos sold in many Puerto Rican chichorros. A chinchorro is a hole in the wall bar that has the warmest greetings but coldest beers, great service, and sometimes the most authentic tasty food in town. I’m sure these will be a hit on your next Taco Tuesday or at your next gathering.
Ingredients:
- 1 lb boneless chicken breasts or thighs
- 1-2 tsp salt to taste
- 1 tbsp avocado oil
- 1 tbsp minced garlic
- ¼ cup diced onions
- 2 tbsp Taco Tuesday Seasoning
- 2-3 tbsp tomato sauce
- ¼ bunch cilantro, minced (optional)
- 1-2 potatoes, cubed
- 1 tbsp butter
- White tortillas
- Shredded cheese and hot sauce (optional)
Directions:
- Start by boiling the chicken with salt, until completely cooked through. Approximately 12-15 minutes. Make sure the meat is not pink in the center. Reserve ¼ cup of the water.
- Once the chicken is cooked, chop or shred the meat with 2 forks.
- In a separate pot, add the oil, garlic, onions and stir fry on high heat for a minute. Add a splash of the reserved water, seasonings, tomato sauce and shredded chicken. Mix well, fold in the cilantro if desired and allow the chicken to simmer on low heat for 10 minutes or until all the flavors are combined.
- While the chicken simmers, boil the potatoes until soft and tender. Strain and add the cooked potatoes into a bowl. Mash with butter and salt to taste.
- Once the chicken and potatoes are ready, warm up the tortillas, add a thin layer of mashed potatoes, top with chicken and cheese if desired, close the taco and wrap the bottom with a napkin to pick up any excess liquid from the meat.
- Try them with a splash of hot sauce and let me know what you think!
