Mmmm, Laksa 😋
Two years after my wife and I married, we moved to Canada, so I could continue the next step in my education. We lived, studied and worked in Canada for six years, then decided to settle in Australia. There were two reasons why I was willing to settle in Australia: I could ride a motorcycle all year long and enjoy laksa.
I know it probably seems silly to you, but I really love this iconic Southeast Asian (Chinese-Malay) noodle soup, especially the curry laksa variety (laksa lemak)! How delighted was I then to discover Darwin, NT, is holding a laksa festival this month. My thanks to the team at Time Out for drawing this event to my attention. I will certainly be putting this on the bucket list! Plus, my wife and I really enjoyed visiting Darwin.
Sadly, I have neither the luxury nor the funds to travel to Darwin and taste the laksa-flavoured cold foam coffees, vanilla slices, bánh mì, pavlova and even shio pan (a popular buttery roll that combines the soft, fluffy interior of milk bread with the rich, flaky shape and texture of a croissant).
