Butternut Squash Gnocchi and Brown Butter Sage Sauce using the roasted butternut squash from my last reel. Here's the recipe: Butternut Squash Gnocchi Makes about 6 Servings 8 oz Butternut Squash Roasted and mashed 3 Cups AP flour, plus more for dusting 1 egg 1/4 tsp nutmeg 1/2 tsp salt To make the gnocchi, mix all the above ingredients and gently knead to form a soft dough, about 1-2 minutes. If the dough is wet and sticky, add a little more flour as needed. Turn the dough onto a floured surface and roll into a rectangle that is about 12 by 8 inches and 1/2 inch thick. Cut the triangle length wise into 1 inch wide strips. Genltly roll each strip to make round logs. Using a knife or bench cutter, cut each rope into 1inch pieces. Dust with flour as needed. Your gnocchi should resemble little pillows. To serve, drop gnocchi into salted boiling water until they begin to rise to the top of the pot, about 30 seconds to 1 minute. Today our little snickerdoodle turns 3! Celebrating Princess Anria. She’s smart, witty, full of discernment and will not mince her vocabulary for anyone 😂. She loves her race cars, sports, cooking (known to her as making the ingredients) and will do it all in her dresses and bows. This morning she woke up bright and early at 5:00am- ironically when she was born- to wish herself a happy birthday and request blueberries “triangles” (aka scones) for breakfast. I’m happy to be “Mimi” 49 my little cooking assistant and mini bougie best friend. Happy Birthday honeybun!
