Mocktails for virtual happy hours
Looking for a booze-free beverage to serve at this week’s round of virtual happy hours?
How about Lemon Ginger Green Tea?
WHAT YOU NEED
- 3 cups filtered or spring water
- 4 green tea bags, regular or decaf
- 1 tablespoon fresh ginger root, peeled and thinly sliced
- 2 tablespoons fresh lemon juice, plus 4 slices for garnish
- 2 tablespoons honey
MAKE IT
- In a medium saucepan, bring water to just below boiling point.
- Remove from heat.
- Place tea bags into pitcher, add ginger slices.
- Pour hot water over tea bags and allow to steep for 8-10 minutes.
- Remove tea bags, stir in lemon juice and honey.
- Can be served either warm or iced.
- Garnish each serving with a lemon slice if desired

Is it OK to put whole nuts in a blender if you are on a low-fiber diet?
That might depend on your blender. If you have a high-power blender that pulverizes tough-to-digest nuts into fine particles, go for it. Ground nuts and nut butters are low-roughage. Remember to think in terms of “roughage” versus fiber. If the food is soft or pureed, it’s low-roughage. If it’s tough and coarse, it’s higher in roughage.
