Yummm, Pumpkin Pie Smoothie

Ditch the Halloween candy in favor of this tasty and nutritious Pumpkin Pie Smoothie. It’s low-sugar and dairy-free.

INGREDIENTS

1 can coconut milk, chilled (we're partial to Trader Joe's)

3 medium bananas, sliced and frozen

¾ cup 100% pumpkin puree, organic preferred

1 tbsp pure maple syrup

1 tsp pumpkin pie spice (OR 1/2 tsp cinnamon, 1/4 tsp ground cloves, 1/4 tsp nutmeg)

¼ teaspoon pure vanilla extract

MAKE IT

Place canned coconut milk in the refrigerator for 1-2 hours or until chilled. Put frozen bananas into a food processor or blender. Blend until the bananas become crumbly. Add chilled coconut milk. Blend until smooth and creamy, scraping down the sides of the blender as needed. Add the remaining ingredients and blend until smooth. Serves 2.
