Banana “Ice Cream”

Not sure what to do with those overripe bananas? Freeze and blend them for banana “ice cream”. Keep it simple with just one ingredient (bananas!) or embellish it with nut butter, cocao nibs, spices, cocoa powder, etc. It won’t taste like ice cream, but it’s a satisfying, sugar-free, dairy-free alternative that you can enjoy regularly.

Quick Tip - Winter Squash Tip

Winter squash, like acorn, butternut and spaghetti, is a great choice for delicate guts because it cooks up nice and soft. Puree its flesh into soups and sauces or roast it for a flavorful side dish. Nervous about cutting through the skin? Try this neat trick from Food & Nutrition Magazine:


1. Wash the squash, then use a sharp knife to poke a line of small slits in the skin where you plan to slice the squash in half.


2. Microwave for 5-6 minutes or until slightly softened (time varies depending on the size and variety of the squash).


3. Allow squash to cool before carefully sliding a knife through the slits to cut it in half.
