...CAKE.
Need I say more, LOL?
It's been raining here, in my part of the world. Forever. For weeks, more than normal! Not that I mind rain. I actually enjoy it. But it also makes me want to curl up under a blankey...and do nothing. LOL
The feeling is welcome. I've been working, then on top of that, purging. Also - turns out I have (I can't believe I'm writing this...) MICE. (Thanks, cats! Need a refresher on that job description, do ya? lol) I've been dealing with that, too. I'd really love to catch the little gaffers and take them out into the woods and say here. ALL THIS IS YOURS, lol. Enjoy! (And leave my place alone!)
(Kitties don't seem worried. See one of their responses, when I suggested they needed to get on 'all things mouse'!)
With all this going on, and my next release still up in the air (there's one in September, but I'm planning on having one for you before that, and I'm just sorting that out) I thought it was time to crack out something I promised to you a while ago...a special, incredibly delicious recipe: Lisa's Apple Streusel Cake.
And just out of the oven, warm, delectable cake goes great with getting snuggly under a blanket, and reading too, doesn't it?
Or...just doing nothing!
LIsa, my awesome friend from the UK, gave me permission to share this with you. This is the cake that my friend and I really loved, and couldn't stop eating. I used butter from grass-fed cows in it, also, full disclosure. So I don't know if that made a difference, but it's a terrific recipe, and really also comes out taking like real food, if you know what I mean.

Lisa's Apple Streusel Cake
Streusel topping
- 3/4 cup (3 ¾oz/105g) all-purpose flour
- 1/4 cup (¾oz/21g) rolled oats
- 1/2 cup (4oz/115g) sugar
- 1/16 teaspoon salt
- 6 tablespoons (3oz/85g) butter
Irish Apple Cake
- 1/2 cup (4oz/115g) butter at room temperature
- 1/2 cup (4oz/115g) sugar
- 2 teaspoons vanilla extract
- 2 large eggs
- 1 1/4 cups (6 1/4oz/177g) all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/8 teaspoon salt
- 4 tablespoons milk
- 3 granny smith apples , peeled and sliced thinly
Instructions
- Preheat your oven to 350°F (180°C) then butter and line a 9-inch bake pan. Set aside.
For the Streusel topping:
- In a medium bowl, combine the flour, oats, sugar, and salt. Next rub in the cold butter until fully incorporated and you've reached the texture of coarse breadcrumbs. Set aside in the fridge while you make the cake.
For the Irish Apple Cake:
- Cream the butter and the sugar together in a large bowl until light and fluffy.
- Next, add in the vanilla then beat in the eggs one at a time.
- In a separate medium bowl combine the flour, baking powder cinnamon, and salt.
- Fold the dry ingredients into the wet along with the milk.
- Once the batter has formed, transfer it to the prepared cake pan and lay on the sliced apples, making sure they are arranged in one even layer.
- Cover the apples with all the streusel topping .. scatter evenly but do not push down. You want a rough layer.
- Bake for roughly 35 - 45 minutes, or until the top is golden brown all over and crisp and a skewer pushed in the centre comes out clean.
- Remove from the oven and allow cooling slightly before turning out of the tin.
- When ready to serve, dust the cake with powdered sugar (optional), slice and enjoy. Store the cake in an airtight container at room temperature for up to 4 days. Can be frozen once cooked - either whole or sliced.
Note: This cake is a little sweet for my taste even with the tart apples so I reduced the amount of sugar in the cake to 100g and it tasted great.
