Suffering Succotash

Hi , 


Have you ever gone to a restaurant and go to use the salt, only to have the lid come off and all the contents wind up on your food? Or you were trying to have a nice meal and something else happens outside of your control, ruining the experience? Yep, that’s what happened to me. Kind of. If you are wondering about my newsletter title for this month, it is very, very fitting. lol


So, a few days ago, I was looking for new recipes to try. I wanted to surprise my amazing fiancée with a new dish. He’s the one who does the majority of the cooking if he’s home, and this time I wanted to do something different. Something that he and the kids might enjoy.


I found a recipe called Succotash. The name of it made me laugh since I grew up watching Sylvester and Tweety bird (these two make somewhat of an appearance in a future story of mine, so keep watch 😉).


Anyway, after work, I went and bought all the ingredients to make the dish and was hoping to have it done by the time he got home from work. Sadly, I started it too late, so it wasn’t quite finished.


Shortly after he arrived home, I managed to make it to the last step—the combining of all the veggies into the frying pan for the last 6 minutes. I grabbed out the large container of kosher salt and had a hard time getting the salt out, so I banged the side of it with my hand.


When, all of a sudden, the lid pops off and out comes all the salt (at least four cups worth), landing right on the veggies (corn, okra, onion, edamame and garlic) in the frying pan. There was no way to salvage it. I was so sad and upset.


My fiancée came over and gave me a big hug, letting me know it’s okay, and then, together, we prepped more veggies (minus the onion as we had run out). I am so grateful that I have someone in my life that constantly reminds me of how loved I am and that no matter what happens, everything will be just fine.


I should have taken a picture of the dish with all the salt. That was my food debacle for the week, but all’s well that ended well. The food was delicious. We’re definitely going to make it again…but this time, without all the salt.
