Don’t get confused! This is not Gallo pinto- it’s rice and beans. Yep- that’s exactly what the dish is called given it’s Caribbean influence (especially Jamaican). Basically it’s a spicy gallo pinto made where the rice is cooked in coconut milk and This dish is more of a lunch or dinner than the Gallo pinto breakfast, and we usually eat it with Caribbean chicken! Delish!
