I Didn’t Kill It!

Almost six-and-a-half years ago, I created a sourdough starter. It’s contributed its natural-yeasty goodness to many delicious loaves of bread (plus waffles, pancakes, and more). Having a starter is kind of like having a pet. I even named mine (Leanderthal, since I live in Leander, TX).


But several months ago, I shoved Leanderthal in the fridge and neglected it. Sourdough starter needs to be fed (with water and flour) regularly so the marvelous little bacteria in it have something to eat. After maybe six months with no feedings, I was scared to pull it out. I knew it might have molded, and if that was the case, I’d have to toss it and start over.


This week, I finally took it out of the fridge. No mold! I hadn’t killed it! And, to my delight, after just four feedings, it was very bubbly and ready to be used for baking.


When my kids and husband get home from school and work, they’ll be delighted to find this on the countertop:

If I can keep from eating it all by then, that is.
