My Quest For Perfect Sourdough

I've been making sourdough even longer than I've been writing books. I created a sourdough starter almost eight years ago (March of 2016), and I've baked a lot of loaves in that time!

I never bothered to learn a lot about technique, though. I appreciated the really good loaves and was usually uncertain why the less-good ones were, well, less good.

I decided to change that recently. I've been spending time on a Facebook group called Sourdough Geeks, and I also a book on sourdough baking for Christmas. I've been gradually adjusting my process, trying to get every element of it right ... ingredient ratios, rise time, shaping, scoring (making designs in the crust), and more.

Here's the closest I've gotten to perfect! It's not there yet, but we really enjoyed looking at and eating this loaf a few days ago!

I'm currently working on another loaf. My primary goal is to get the proofing (rising) time just right so that the loaf turns out with a rounder dome. I welcome all the luck you'd like to send me ... but even if I fail, it usually still tastes good!
