Cookie Dough Made of ... What?

The other day, I made a recipe I hadn't made in months: chickpea cookie dough. That's right—it's got chickpeas (A.K.A. garbanzo beans) in it, along with maple syrup, peanut butter, almond flour, oat flour, and more. And ... can't forget the dark-chocolate chips!

Now, this cookie dough isn't for baking. It's for EATING, as is. It's got healthy protein in it, and it's not overly sweet. For me, it's perfect when I want a sweet snack but don't want to indulge in a "real" dessert!

If you like experimenting with healthy-ish snacks, here's the recipe! (I like to double it, and then I split it between several small plastic containers and freeze most of it. I keep one thawed container in the fridge.

Grab your favorite snack (bet it doesn't have chickpeas in it!), and settle in for some book recommendations.
