On September 16th we Mexicans celebrate a very important date: OUR INDEPENDENCE! This is one of the best dates to be in Mexico due to all the celebrations going on! Join the festive mood with a nice traditional meal; Are you in?
If you're not in Mexico right now, don't worry, you can celebrate this special day from ANYWHERE with this easy Mexican dinner idea.
And... if you are in Mexico, you don’t need to do the shopping, we can do it for you! You don’t even have to cook if you’re feeling particularly lazy 😜 Remember you can always ask for a private cook to prepare any special meal you desire.
Let’s Get To It! Here’s our easy recipe on how to prepare traditional Golden Chicken Taquitos with Guacamole:
Ingredients
- 500g cooked chicken breast
- 1/4 of onion filleted
- 1/4 onion finely chopped
- 1 clove of garlic finely minced
- 3 avocados
- Juice of 1/2 lemon
- Chopped cilantro/coriander
- Corn tortillas
- Oil for frying
- Sour cream
- Fresh cheese
- Romaine lettuce filleted
- Salt
- Pepper
Instructions
🌮 For the tacos
In a frying pan heat a little oil and fry the onion and garlic; add the chicken, sauté for 3 minutes. Reserve until you finish the guacamole. Extra easy right?
🥑 For the guacamole
ATTENTION because this is the recipe to prepare THE TRUE ONE AND ONLY Mexican Guacamole 🧐 Mix the previously mashed avocado in a bowl with the chopped onion, the cilantro and the lemon juice. Add salt and pepper to your liking.
In a large pan add enough oil for deep frying and heat over medium heat. Fill the tortillas with the chicken and roll the tacos as tight as you can. Once the oil is hot, fry them without burning.
Serve with cream, cheese, lettuce and guacamole.
